A Traditional Spanish Rice Dish Infused with Saffron and Bold Mediterranean Flavors

โ 1 medium onion, diced
โ 3 cloves garlic, minced
โ 1 large tomato, grated
โ 1 tsp smoked paprika
โ ยฝ tsp ground turmeric (optional, for color)
โ 1 tsp sea salt
For the Vegetables & Protein:
โ ยฝ red bell pepper, sliced
โ ยฝ yellow bell pepper, sliced
โ 1 cup artichoke hearts, quartered
โ ยฝ cup green peas
โ ยฝ cup canned chickpeas, rinsed & drained
โ 10-12 green beans, trimmed
โ ยฝ cup diced zucchini
โ ยฝ lemon, cut into wedges
For Garnish:
โ Fresh parsley, chopped
โ Lemon wedges
โ Cracked black pepper

1๏ธโฃ Prepare the Saffron Infusion โ In a small bowl, steep saffron threads in 2 tablespoons of warm water and set aside.
2๏ธโฃ Sautรฉ the Base โ Heat olive oil in a large paella pan or wide skillet over medium heat. Add diced onion and sautรฉ until soft (about 3-4 minutes). Stir in garlic and grated tomato, cooking until the tomato thickens into a rich paste (another 2-3 minutes).
3๏ธโฃ Add Spices & Rice โ Stir in smoked paprika, turmeric (if using), and salt. Add the rice, stirring to coat in the flavorful base.
4๏ธโฃ Simmer the Broth โ Pour in the warm vegetable broth and saffron infusion. Gently stir, then let it simmer uncovered over medium-low heat.
5๏ธโฃ Layer the Vegetables โ Arrange bell peppers, artichokes, green beans, zucchini, chickpeas, and peas evenly on top of the rice. DO NOT STIR after this point! Let the flavors meld as the rice absorbs the broth.
6๏ธโฃ Create the Socarrat (Crispy Bottom) โ After about 20 minutes, most of the liquid should be absorbed. Increase heat to medium-high for the final 2-3 minutes to develop the prized crispy rice layer at the bottom (socarrat).
7๏ธโฃ Rest & Serve โ Remove from heat, cover with a clean towel, and let sit for 5 minutes. Garnish with fresh parsley, black pepper, and lemon wedges.
